I made this tonight: Black bean and sweet potato chili. Its other ingredients are bulgur, crushed tomatoes, onion, red bell pepper, garlic, broth, lime juice, and spices.
It was yummy and easy to make. It's going to be my lunch for the next few days.
I had to make three adjustments: I used canned beans (the recipe says how to adjust for that); the store didn't have any low-sodium vegetable broth, so I used low-sodium chicken broth; and I didn't have any cilantro, optional or otherwise.
